Our repair crew restores the existing ovens in Gaza and Mogadishu on site, rebuilds the bellows and the kneading trough, and locks in the flour supply on a direct contract with the mill; we keep the baker on a protected wage and proper safety, then hand priority bread vouchers to the most fragile households. As more than eight thousand loaves return to the counter each day, the oven's daily output log and a GPS stamped photo reach your account every week. On the day the bread comes out, the neighbourhood tailor writes a note on the flour dusted counter with one finger.
