Before first light the trough fills, the oven mouth glows red, and the steam of fresh bread drifts down the street. Alongside the fixed ovens we rent in Gaza and Yemen, we set up mobile ovens; our bakers knead the morning dough, log the hygiene and temperature checks, and carry the loaves door to door. We write the flour supply chain, the fuel plan, and the bakers' shift roster into an open ledger; a priority coupon reaches the most fragile household first, and what remains goes to children's feeding points. You make ten thousand warm loaves a day possible. With every run a photo, a GPS location, and the recipient's signature land in your account; without proof, nothing counts as delivered.
On the first day the oven was set up in Gaza, the dough crate tipped over. Baker Yusuf cupped the crumbs scattered on the floor: "A crumb is bread too." That evening Ayse scattered those crumbs into her soup, and her small son looked up from his bowl: "Mum, today our home smells of bread." The next morning, two children at the oven door gave up their place to an elderly man; he broke the loaf he was handed in two and held half of it back out to them.
