Alongside the fixed ovens we rent in Gaza and Yemen, we set up mobile ovens; our bakers knead the morning dough, log the hygiene and temperature checks, and carry the loaves door to door. We write the flour supply chain, the fuel plan, and the bakers' shift roster into an open ledger; a priority coupon reaches the most fragile household first, and what remains goes to children's feeding points.
